First, the name

Simsool (심술) is a Korean pun. Written one way, simsul means "grumpiness" — the mood the scowling donkey on the label is acting out. But split it as 심(心)+술 and it reads "heart liquor": a drink for how you actually feel. Bad day, good day, either way — the donkey gets it. That wink made the brand a social-media favourite among young Korean drinkers long before it left Korea.

The house behind it

Simsool is brewed by Baesangmyun Brewery (배상면주가), founded in 1996 and one of Korea's most respected traditional-liquor houses. This is the family behind Neurin Maeul ("Slow Village") makgeolli and the herbal classic Sansachun — brewers who treat rice fermentation as heritage, not trend. Simsool is their answer to a simple question: what does a traditional rice wine look like when it's built for a Friday night?

Simsool 7 — the pink one

A sparkling yakju (refined rice wine) at an easy-going 7%, brewed on a rice base and coloured a natural blush by grape and blueberry juice. The pour is soft pink, the nose is fresh fruit, and the palate lands sweet-then-tart with a fine, gentle fizz — closer to a pét-nat or a fruit lambic than to anything labelled "soju". At 330ml it's a one-person bottle that disappears fast.

Simsool 7 Bubble — the playful one

Same rice base, same 7%, completely different personality. Bubble leans into banana-and-cream-soda territory: think of the flavour of a Korean corner-store banana milk that grew up and learned to sparkle. It's nostalgic, fizzy and unapologetically fun — the bottle we hand to people who claim they don't like rice wine, and the one that converts them.

How we drink it

  • Cold. Very cold. Straight from the fridge, in a small tumbler or wine glass. No ice needed.
  • With heat. The sweetness and bubbles are built for Korean fried chicken, tteokbokki and anything gochujang-red.
  • With dessert. Bubble next to waffles, bingsu or a cheese plate is a genuine move.
  • At a party. Our crews pour Simsool at *82 party nights in Toronto — it was made for a dancefloor.
